Pan de Yuca
This daily prompt is like an earlier one a few days ago:
No other food brings a smile to my face after a frustrating moment. This is true whether at work or beyond. The incomparable Ecuadorian Panes de Yuca does this for me. In Colombia, they’re known as Pandebono, and in Brazil, they go by ‘Pão de Queijo.’ Although their recopies are not quite the same, all three are very delicious.
This delicious treat, made from baked yuca starch and cheese, can lift anyone’s spirits. In Ecuador, they’re typically served with yogurt, but I personally prefer them with coffee.
