What food would you say is your specialty?

I’m no expert in the kitchen, but I do consider myself an enthusiast who’s always learning. If I had to choose, I’d say breakfast is my specialty. I believe it’s the most important meal of the day, and I can’t go a single morning without it. I also can’t leave the house without a proper breakfast—fruit, protein, and carbs.

On weekends, I try to cook something new. Sometimes it’s a traditional dish from my country, like “ceviches”, bolones de verde”, or “motepillo cuencano”. Other times, it’s a foreign recipe I came across during the week, like a Spanish tortilla or an Italian frittata.

In any case, I find breakfast is the meal that inspires me the most. It’s not because I think I’m some culinary authority.
